Over the holidays and as the weather gets cold and the nights long, one of our favorite things to do is wake up, keep the lights low, and turn on the oven. These scones are a great way to keep things simple in the kitchen and keep the sugar low and protein high for the morning. Give them a try and let me know how you like them.

Ingredients

  • 2 c almond flour
  • ¼ t salt
  • 1 t baking soda
  • ½ c dried cranberries
  • 6 drops orange vitality essential oil or 1 T orange zest
  • 1 large egg (or 1T ground flax mixed with 3T water)
  • 2 T maple syrup

Directions

Preheat oven to 350 degrees
In medium sized bowl mix together all dry ingredients.
In separate bowl mix all the wet ingredients.
Mix contents of 2 bowls together.
Using a ¼ c measuring cup, scoop and place on parchment paper to bake
OR shape into a circle + cut into triangles + move to parchment for classic shaped scones
Bake `12-15 min until golden
